Strawberry Shortcake Recipe

What is Shortcake?
Shortcake is made using flour, sugar, baking soda, butter, milk, cream and eggs. It is a like a sweet biscuit. To make shortcake, the dry ingredients are first blended together. The butter is then added to this mixture. The liquid ingredients are then added into this mixture to make a wet batter. Spoonfuls of this batter are taken and placed on a baking sheet and set to bake. The batter can also be made to take the form of a whole cake instead of small, individual pieces. There are many varieties of shortcake such as blueberry shortcake and peach shortcake, but the most popular variety is the strawberry shortcake.

Ingredients to Make the Strawberry Shortcake
Let us now look at the ingredients required to make strawberry shortcake.
Filling
- 1/3 cup sugar
- 1 quart fresh strawberries
Scones
- 2 cups all-purpose flour
- 3 tbsp sugar
- 1 tbsp baking powder
- 1 stick butter
- 1/2 tsp salt
- 3/4 cup cream
- 1 egg, beaten
- 1 tsp vanilla extract
- cookie sheet
- parchment paper
Topping
- 1 1/2 cup whipped cream
- 1/2 tsp vanilla extract
- 2-3 tbsp sugar
Directions to Make Strawberry Shortcake
Let us first prepare the whipped cream. Add 1 1/2 cups of fresh cream, 1/2 teaspoon vanilla extract and 2 to 3 tablespoons of sugar in a big, mixing bowl. Stir and combine these ingredients and cover and chill in the refrigerator for about 30 minutes. Once chilled, remove the mixture and beat it until it begins to form peaks. Pay attention while doing this because you want your whipped cream to be light and airy and do not want it to get too stiff.
Now, let us rinse 1 quart of fresh strawberries under cold water. Slice the berries and place them in a bowl. Sprinkle 1/3 cup of sugar on the berries and make sure that all of them get a coat of the sweet sugar. Mix well and let the berries sit for 1 hour.
For the shortcakes / scones, begin by preheating the over to 400°F. Place a rack in the middle of the oven. Take the cookie sheet and line it with parchment paper.
In a large bowl, add 2 cups of all-purpose flour, 3 tablespoons of sugar, 1 tablespoon of baking powder and 1/2 teaspoon of salt. After mixing these ingredients, gradually add small pieces of butter and fold into the mixture. The mixture should look like crumbs, once you are done with the mixing. Whisk together 1 teaspoon of vanilla extract, 1 beaten egg and 3/4 cup of cream. Add this to the mixture and prepare a dough for the shortcake. Do not overwork the dough.
Transfer the dough to a surface that has been lightly dusted with flour. Gently knead the dough and once it is ready, take a cookie cutter and begin cutting round shapes after patting and rolling the dough. Place the cut shapes on the baking sheet. You can brush these scones with an egg wash that is prepared by mixing 1 large beaten egg with 1 tablespoon of cream. Bake the scone for about 15-20 minutes until they turn a nice, golden brown. Place them on a wire rack to cool.
To Assemble the Shortcake
Take a dessert plate. Cut the scones horizontally with a serrated knife. Place the bottom portion of the scone with its soft side facing up. Butter the scone with whipped cream. Place some of the mixture of strawberries over the whipped cream. Place the other half of the scone on top of the strawberries. Once again butter it with whipped cream and place the mixture of strawberries. Your delicious strawberry shortcake is ready to be served.

I was a little worried about the consistency of the dough at first, and then about how thin the cake came out and then about putting so much of the strawberry sauce on the cake for worries of it getting soggy!
